Just went to see that play about a week ago, funnily enough.

As for Applejack hating you, I think you'd have to really, really piss her off (rape Applebloom or something like that) to get her to that point, and by that point you'd probably be getting anally horn-raped by Celestia and Luna. At the same time. While Shining Armor, troop, and magically rule-63'd Cadance and Twilight took your mouth/skullfucked where your eyes used to be.

That is why if you decide to make lots of ponies of influence and power to hate you... make sure you have someponies as influential and powerful... if not more that would back you.

I think that the only people with high-ish power you could get away with pissing off are the more arrogant nobility in Canterlot or the other big cities, and even then you couldn't really do anything that bad without at least miffing Celestia. She wouldn't mind you a few pranks, but anything illegal or really, really immoral would lose you some vital sympathy.
